The beginning of November is the start of Christmas preparations in our house. I have a tried and tested schedule that means all the preparations are done and dusted by the 1st of December. Then we can relax and enjoy the holiday season. The first task on the list is the baking of our Christmas cake.
I have always loved my mum’s Christmas cake. It is a recipe that has been handed down through generations and all I can say is, ‘Thank God for the invention of electric mixers!’ When I was growing up and wanted to be involved in the baking I think I was a bit of a nightmare. You see, I have always liked cake mix more than cake! So I would be sneaking into the kitchen to steal mouthfuls of the soaking fruit and I clearly remember whinging and moaning if there wasn’t enough cake mix left in the bowl for me to lick out.
When I developed an intolerance to gluten, I only needed to make a few little tweaks to turn the recipe into a tasty gluten free version.
